The Story Behind Our Single-Origin Coffees

We roast in small batches out of Livingston, Tennessee, but the coffees we source travel a long way to get here. Each one in our single-origin lineup comes from a specific farm or cooperative, processed in a way that shapes every note in your cup. No blends. No guesswork. Just coffee that tastes like where it came from.

Here's the story behind each one.


The Martis | Light Roast | Single Origin Mexico

The Martis comes from the highlands of Mexico, where the honey-wash process sets it apart from the crowd. In honey processing, the coffee cherry's outer skin is removed but a layer of sticky mucilage — the "honey" — is left on the bean as it dries. That extra contact time with the fruit is what gives The Martis its signature orange citrus brightness and creamy, full body.

It's a light roast that doesn't taste thin. If you've written off light roasts as too sharp or too grassy, The Martis is worth a second look. Brew it as a pour-over or drip and let it open up as it cools.


The Wilderness | Medium Roast | Single Origin Brazil

Brazil is the world's largest coffee producer, but not all Brazilian coffee is created equal. The Wilderness comes from a region known for producing beans with natural sweetness and low acidity — and it delivers exactly that. Expect red fruit notes, mild acidity, and a creamy body that makes it one of the most approachable coffees in our lineup.

It's the kind of coffee that works any time of day. Easy-drinking without being boring. Great as a drip brew or French press.


The Rocking Chair | Medium Roast | Single Origin Brazil

Also from Brazil, The Rocking Chair takes a different direction than The Wilderness. Where The Wilderness leans fruity and light, The Rocking Chair settles into something warmer and more grounded — walnut, dark chocolate, and brown sugar in a medium roast that feels like a front porch on a cool morning.

The name fits. This is a slow-down-and-enjoy-it kind of coffee. It pulls beautifully as a drip brew and holds up well with a splash of cream if that's your style.


Appalachian Sunrise | Dark Roast | Single Origin Costa Rica

Costa Rica has some of the most tightly regulated coffee production in the world — only Arabica varieties are permitted by law, and the country's volcanic soil and high altitudes produce beans with exceptional clarity. Appalachian Sunrise reflects all of that. It's an espresso roast with citrus brightness, cocoa depth, and a lively acidity that cuts through milk without losing its character.

Pull it as a straight shot or use it as the base for a latte or cappuccino. Either way, it's a coffee that wakes you up and means it.


Grumpy Old Bear | Dark Roast | Single Origin Brazil

Not everyone wants bright and fruity. Some mornings call for something darker, bolder, and unapologetically roasty. That's Grumpy Old Bear. This Brazilian dark roast brings milk chocolate, raisin, and roasted peanut notes together in a cup that's rich without being bitter.

It's the one for the person in your house who "doesn't like fancy coffee." Spoiler: they'll like this one. Works great as drip, French press, or cold brew concentrate.


The Outpost | Medium Roast | Single Origin Uganda

Uganda doesn't get nearly enough credit in the specialty coffee world. The Outpost is our nod to that — a medium roast sourced from East Africa that brings a distinctly different character than our Brazilian and Central American offerings. It's currently out of stock, but it's worth knowing about so you're ready when it comes back.

Blends have their place, but single-origin coffees let you taste something specific — a region, a process, a harvest. When you drink The Martis, you're tasting what honey-washing does to a Mexican highland bean. When you drink Appalachian Sunrise, you're tasting what Costa Rican volcanic soil and altitude produce.

We source with intention and roast in small batches so that character comes through in every bag. That's the whole point.
